Pruning The pruning consists of supresing superfluous wood on a fruit rod per stick! This act determines the profit level and therefore the quality of the next harvest! Per stick the winegrower does approximately 10 to 12 cuts what with approx. 5000 vines per hectare in our enterprise 500.000 to 600.000 cuts per year meant. Therefore it is obvious that we are occupied with this task for several weeks in icy cold! |

Filtration In the wine cellar you find practically the finished, in a juvenile manner, sparkling wine. It had approximately three months time to mature and to grow naturally. Now it is to be filtered to be bottled according to the demand.
|
Filling Already in January we fill the first wines which should be drunk freshly and youngly, and also those which have gone out! Before the wine sees the bottle from inside, it receives from the winegrower the so called "last grinding" what he learned after his long experience and with a lot of intuitive feeling executes!

The digging After the vines were cut off they must be removed from the arrangement. They are put by hand in the grass alley and smally chaffed. This task takes up possibly the same time like the pruning itself.
